Picky Eater Approved Banana Muffins

If you’re a mom, I’m sure you’ve dealt with a picky eater. And if you haven’t, please teach me your ways!! 

I have four kiddos. One of them is too young, but I’m already praying she’s not as picky as my oldest. My two children in the middle are great eaters! Yes, there are things they don’t like, but they don’t refuse something simply because it isn’t sugary, pink or covered in peanut butter. Granted my daughter is getting better with time. And with age {at least in her case} comes a better understanding that she can at least try something first before declaring it poison.

But I’m always seeking new recipes to try that will just give us more options. And I know with this recipe, there are a lot of things you can add to make it your own! And in my experience, letting your kids help in the process makes eating it seem more fun!

What you’ll need:

•2 cups of flour

•3/4 cup brown sugar

•1 tsp baking soda

•1/4 tsp salt

•1/4 tsp cinnamon 

•1/3 cup vanilla yogurt 

•1/2 cup coconut oil

•3 ripe bananas, smashed

•2 eggs

Preheat oven to 350 and give your muffin tin a quick spray of oil. 

In a bowl, whisk together flour, baking soda, salt and cinnamon. And in a separate bowl, mix your brown sugar into the softened coconut oil. Then add in eggs, yogurt and bananas, and mix in your bowl of dry ingredients. Bake for 20 minutes, and enjoy!

I sprinkled cinnamon sugar on the top of them before baking too, just for extra sweetness!
